I need to modify an ODB++ by defining several Components as "Non-Polarized", and then export back to ODB++. Is this possible in FAB3000?

Yes. Using the command menu: Edit | Properties..., you can change the attributes of ANY objects and then export back out the ODB++ (menu: File | Export | ODB++).
