How about if I want to delete text and add text into FAB.art file, how I do it? can you demo to me by video as well?

Gerber data is just lines (so I don't know the font used on that text in your same Gerber), however in this tutorial I will replace it with a generic font and assign a different text value.
Note: After editing, you can export the Gerber files using menu: File / Export / Gerber... (or export to any other format you wish).
